Once a week I travel home from my dietitian job in Cleveland. It is a good time to listen to NPR radio. Tonight there was an interesting interview discussing the correlation between lack of culinary education and the obesity crisis. They brought up the idea that as we see a decline in home economics classes the public is more dependent on food manufacturers to provide the meals for our society. We all know food manufacturers have to focus on taste to compete in the marketplace. This process could include ingredients that aren't in your best interest.
