Talk about multitasking! Less than a week ago we had snow flurries: today there are herb beds to clean, miles to log biking, all that spring stuff - love it!
Last night we started a new series of the "Dining With Diabetes" program in Mercer, PA. It was our largest class since starting in January, there were 30 participants. They seemed eager to learn and were equally eager to taste the dishes I demonstrated. The most important thing I hoped they realized was how learning to cook gave more control over your health and how great it tastes!
We are getting focused for next week's class here at Herb Garden School: Eating From the Earth (in honor of Earth Day). Class next Thursday April 18th will include: a Mediterranean Gratin (w/five kinds of veggies), Quinoa Pilaf w/ Pine Nuts, Italian Tofu Spread (w/sun dried tomatoes, toasted almonds, and fresh herbs), and Tropical Fruit Tapioca (w/soy and coconut milk). This will be a great starting point for anyone contemplating a vegetarian diet or just adding some meatless meals for better health.
